3 tablespoons of vegetable oil (or canola)
2 garlic cloves (minced)
3 heads of broccoli
7 mushrooms (sliced)
2 carrots (chopped)
2 zucchinis (chopped)
1 small onion (minced)
1 head bok choy (chopped)
½-1 package of firm tofu
½ cup of soy sauce
3 tsp corn starch
½ cup water
2 tsp black pepper (optional)
Heat 2 tablespoons oil in a sauté pan over medium heat. Once they are golden in color remove from pan.
Add the remaining oil into the pan over high heat. Add onions and stir. Once its transparent, add the garlic. Add the broccoli, carrots, zucchinis into pan and add 4 tablespoons of water and cover the pan.
While waiting for the vegetables to cook, you can make the sauce. In a bowl, mix the corn starch with the water. Once the corn starch is completely dissolved, add the soy sauce into the mixture. You can add the black pepper into this mixture for a little heat.
Once the vegetables are cooked, add the cooked tofu. Add the sauce mixture into the pan and make sure all the vegetables are thoroughly coated. Once the mixture slightly thickens, it is ready to serve!
