My boyfriend and I are cutting down eating out and eat more healthy - so we`ve been buying bulk foods at Costco/Smart & Final especially organic chicken breast. Another item we buy often is pasta/tortellini so we decided to try this Rainbow Tortellini Seven Cheese by the brand Olivieri sold at Costco for $9.29. The rainbow tortellini is filled with seven delicate blend of ricotta, asiago, mozzarella, parmesan, swiss, provolone and fontina cheese. For tonight`s dinner we had rainbow tortellini with grilled chicken and side salad.
How to prepare the chicken?
- We cleaned the chicken, sliced the chicken breasts thinner and marinated over night. We used garlic powder, salt, pepper, curry powder, chicken seasoning, olive oil and hint of soy sauce.
How to grill chicken?
- We use our trusty and handy George Foreman Grill, 3 minutes on each side of the chicken breast, for a total of 6 minutes and you`re done!
How to prepare the tortellini?
- Bowl water, sprinkle salt so the heat can be even, add the tortellini for 6-8 minutes and you`re finished! Then drain and add sauce if you`d like, we added organic spaghetti and mushroom sauce.
How to prepare our side salad?
- We used Earthbound Farm Organic deep green blends, wash and add toppings - croutons, shredded cheese and some caesar dressing!
Overall: This is an easy homemade dinner. We grill enough chicken breast for tomorrows lunch/dinner too for my boyfriend and I. The only con is the tortellini isn`t as good compared to Trader Joe`s and we will not be repurchasing. The tortellini is too fragile and breaks, after eating a few handfuls you get tired of it.
