I probably scare off some readers at the mention of the word "DURIAN", sorry!:) I simply love this stinky fruit too much and I have been craving that durian cake I tried a year ago at home. When the craving kicks in, I just have to make it because I don`t know any other places that sells durian cake other than the bakeries in Malaysia! This is a great recipe that I`ve found on the Internet, the only thing I did differently was halved the amount of sugar since my friends do not like cakes that are overtly sweet :) If you love durian, do try out this recipe!
160g caster sugar (I halved this)
250g durian flesh
230g self raising flour
1/8 tsp baking powder
1/4 tsp bicarbonate of soda
1.Beat butter and sugar until light and fluffy.
2.Add in eggs, one by one, beating thoroughly after each addition.
3.Stir in durian flesh.
4.Fold in sifted flour, baking powder and bicarbonate of soda. Mix until well combined.
5.Pour batter into cake mould and bake in the preheated oven at 170C for 45 minutes or until cooked.
