These here are some muffins I decided to give a shot earlier in the week. I was on Pinterest and stumbled upon these muffins and thought they looked fabulous. I had everything it called for in my cabinet, except for the Greek yogurt. The batter was actually made out of ground up oatmeal believe it or not. Trust me, I was skeptical and thought I was going to waste my time and money and end up with these nasty muffins that weren`t edible -- but they were REALLY good. The original recipe didn`t call for banana, but I added it in because I just love chocolate and banana. Unlike the recipe, I blended up my oatmeal, apple sauce, banana and water in my blender, then put the mixture in a bowl and hand mixed all the other ingredients in and folded in the chocolate chips. Upon scooping the mixture into my muffin tins, I realized I had more batter than I anticipated for 12 muffins (I could have probably packed them to the brim but didn`t want them to bubble over while baking), so I ended up making 16 muffins. They were delicious and I`ve shared them with those who have visited and everyone says the same thing, they`re good, not sweet and they`re all surprised it has oatmeal in it!
