Nothing beats getting meat from a butcher shop! We`re lucky enough to have a few good ones in our area. This past weekend we got Sausage stuffed with peppers & provolone cheese. I decided to make sausage peppers & onions, but I wanted to keep it light & simple.
~ Cook sausage in convection oven on a broil pan for 30 min at 350*
~ Caramelize onions in a pan with a tablespoon of garlic butter
~ Add 2 chopped tomatoes, 4 crushed cloves of garlic & one chopped red bell pepper to pan
~ Add some red whine, a drizzle of truffle oil, & bay leaf to pan
~ Cover and simmer on low
~ Cut sausage and add to pan
~ Boil water & cook veggie bow tie pasta until all dente
~ Serve with romano cheese
Easy Peasy & delicious! I will be purchasing more veggie pasta, it adds a nice flavor to most dishes.
