This was my delicious dinner from earlier in the week - a <strong>homemade taco supreme salad!</strong> I have been loving nachos lately since I picked up some queso cheese dip and in order to help get rid of the Tostitos in the house I`ve been incorporating them into my meals when I can. This particular meal was VERY good! We had some taco meat leftover from having tacos the night before, so instead of having tacos again for dinner I decided to switch it up and make it into a salad and throw a yummy nacho spin on it.
What I did was layer the bottom of my plate with some chopped garden salad (lettuce and tomato). I then topped it with some of the taco meat, saving half of it to top the rest of my nachos, I sprinkled 24 mini Tostito chips over the salad, drizzled it with 3 tablespoons of melted queso cheese and then topped that with the remaining taco meat mixture. I then added in a few scoopfuls of Tostitos salsa, with one large dollop of sour cream at the center.
I think this is going to be my "go to" way to have tacos from now on because it was just so enjoyable. It gave a regular ole meal a nice spin and it was really enjoyable. I felt as though I was "cheating" when in all reality it wasn`t that bad (the queso is relatively low in calories for the brand that I purchased), the meat is made from lean hamburger and the nacho chips were a single serving.
