My mom was having a really busy day today so I made dinner tonight! I decided to make Chicken, Asparagus and Lemon Cream Stir-Fry from the Great Taste - Low Fat cookbook I had at my house. First I stir-fried scallions, water chestnuts, chicken breasts and asparagus in some olive oil. Then I made a sauce out of lemon juice, chicken broth, lemon zest, fresh dill and reduced fat sour cream. I served it with some whole grain brown rice. This recipe was really good! My mom loved it and even my brother nibbled at it, which is saying a lot :P
