DOTN: Kaitlin`s Stuffed Flank Stead Veggies!

Hi everyone! I do not know about you but dinner is my favorite meal of the day besides breakfast. I am in love with the variety of foods that can be made as well as vegetables and grains. So weird. I know. However, this night we made a new recipe with a favorite meat of ours flank steak. It is a version that is stuffed and rolled up like a meat loaf! To start all you did was cut the steak and defrost the package of frozen spinach. Also soak the sun dried tomatoes so they are softer. Then lay the defrosted spinach, cut tomatoes and cheese in the steak. Then roll it up and secure with toothpicks before cutting it. Then all you do is cook it in the broiler until it is cooked on both sides! It gave a different flavor and more excitement to the steak! I paired it with a barely risotto & some string beans with spaghetti squash! Thanks so much for reading! Don`t forget to comment and let me know what you think!
