This is my take on a homemade boiled dinner and my first ever! After having a boiled dinner at my boyfriends mothers house or St. Patricks Day I decided to make one at home because my boyfriend was sick (he started to feel ill after we got to his moms, if he felt ill beforehand we would have never left) and had nothing to eat for St. Patricks Day outside of crackers and eventually a bowl of soup. I promised him a boiled dinner because it is something he enjoys once a year, considering he is Irish and its a tradition in his family. So while at the market I picked up a lean corned beef brisket, which is my favorite! I put it on to boil in the water for a half hour, then set it to simmer for 3 hours. Id check it frequently to make sure the water level was good and if not, Id add more. Since my pan wasnt large enough to hold all boiled potatoes, carrots and cabbage, I put 2 other pots on the stove and filled them with water, taking some of the water out of the corned beef pot and putting it in there so theyd all be flavored accordingly. I cut my red potatoes in half to speed up the cooking process and cooked those until fork tender. I cut my cabbage into 3s and boiled that off and added a piece of cabbage and the bag of baby carrots to the pot with the corned beef and cooked all until done.
I eat my boiled dinner with spray butter on my veggies and white vinegar drizzled over all of it. I was going to try some mustard with the corned beef, but Ive always eaten mine with vinegar so I wanted to go with what is traditional for me. Overall it was delicious and a great first attempt at a boiled dinner!
