DOTN: Chicken rolls, rice, amp salad

This was tonights dinner. Chicken rolls, yellow rice, and salad. I wanted to make something quick and easy and that wouldn`t be too heavy.

I had seen my friend do this one time while staying with her so I decided to do it.

What I did:
I cut up pieces of chicken and put it boil for about 20 minutes. When it was done I shredded the chicken, lightly seasoned it with taco seasoning, and placed it to cook on a skillet for 10 minutes.

While that was cooking I had the rice cooking as well. To get the rice this color, I add a packet of sazon y achote to it. Its a packet of seasoning with what looks like a rust colored powder.

Next in another skillet I added a bit of oil. I got a few flour taco shells and filled them with the chicken. I them wrapped the flour around the chicken and pinned it with a toothpick. I placed it in the skillet, never allowing it to settle too long in one spot. This allowed it stay in the roll without needing the toothpick anymore. Each was only in the skillet for under 2 minutes.

For a side I added spinach, and sliced tomatoes. I topped it with a bit of olive oil, vinegar, salt, and pepper.

The entire meal was absolutely delicious. One can also add sour cream on the side to did the rolls in.
