This was my dinner from Tuesday night. My boyfriend and I went over to visit his mother and had dinner over there as well. She sent some chicken salad home with us and since I dont take pictures of my food at her house (Id feel strange, haha), I took this photo of the food in the glad food container she put it in. She told me that since it was such a gorgeous spring day she wanted to incorporate fruit into our meal and she did! She put strawberries, cantaloupe, grapes, pineapple and honeydew melon around the bowl she served it in. Surprisingly the fruit went VERY well with the meal. I havent had chicken salad in SUCH a long time, and I have never had Waldorf chicken salad neither. It was quite refreshing and a treat. If youre not familiar with Waldorf chicken salad it has shredded rotisserie chicken in it, chopped apple, celery, onions (optional), seedless grapes that are cut in half, walnuts, mayonnaise, lemon juice, salt and pepper in it. To go along side it she had some Pepperidge farm wheat baguette rolls she baked in the oven. Seriously, I cant stop saying how delicious this was and yes, this will be something I start making at home. My boyfriend gets a kick out of when I try something his mom has made and I end up making it at home because I enjoy it so much.
