This is the dinner I made for my love tonight. I had run out to do a few errands and upon returning home I was a bit hungry, so I asked my boyfriend what he had in mind for dinner. He wasnt sure, so I suggested an omelet stuffed with some of the steak mixture from our lunch earlier in the day. He said that sounded great, so off I went to cook. My boyfriend is a fabulous cook, but I like making meals for him. Cooking is almost therapeutic for me, plus I get to experiment with different things to see how I can make them better. Anyway!
I added some olive oil to the bottom of a small pan and beat 3 eggs in a bowl, added some salt, pepper and Italian seasoning to the mixture along with some milk. Once combined and when my pan was hot, I poured the mixture in and just let it cook on a lower heat setting. I continued to run my spatula along the edge of the pan, letting some of the egg seep down the sides. Once cooked thru, the middle being cooked but slightly wet, I added my meat mixture, folded it shut and let it cook on both sides for a few minutes. When done, I gently slid it out of the pan onto a plate and added two slices of buttered toast.
My boyfriend thoroughly enjoyed it, told me it was delicious. It looked so good that I think Ill be making one for myself tomorrow.
