DOTN - Spicy sausage amp potato wedges

This was my dinner tonight. I had been running errands picking up supplies I`d need to make some St. Patrick`s day cupcakes (chocolate stout cupcakes with bailey`s frosting!). Upon returning home I just wasn`t in the mood to really cook anything. I`d rather have looked in the fridge and ate leftovers, or even ate a fried egg for dinner (I don`t really even like fried eggs so this should tell you how much of the mood to cook i was in). I knew we had spicy chicken sausages in the freezer so I asked my love if he`d like that with some potato wedges. He said sure so I grabbed them from the freezer and defrosted them in some water for a little bit. I chopped up an onion and put it in the pan, then put the defrosted sausages in and baked for 15 minutes at 350. I turned them over and added in some frozen peppers and cooked another 15 minutes. When they were done, I took out another baking sheet, coated it with Pam and added on some Alexia olive oil, rosemary and garlic wedges. I baked them for 25 minutes at 425 per the package directions and once they were done -- dinner was served.

Since we didn`t have rolls, we ate it on a slice of bread since I was not in the mood to go back to the store. The sausage was very good, spicy but not overly. The wedges were also good. It doesn`t look like a lot on the plate, but it was very filling.
