This was my super simple dinner of the night! Thursday`s are my Weight Watcher weigh in days, so since I don`t get home to eat dinner until after 6:30, our dinners tend to be simple ones because my boyfriend can prepare them while I`m out and when I get home, we can eat. It`s a great system!
We had Italian herb chicken breast, baked potato and some simple (canned since we didn`t have fresh or frozen) green beans. I`ve been purchasing the Purdue seasoned chicken breast - they come individually bagged and seasoned, all you need to do is bake/grill them off and you`re golden. I like the Italian blend - I`m not too crazy about the wine flavored one.
As a side we paired this with a simple baked potato. I like my baked potatoes plain and when they`re done I cut them up, add a little sea salt and fresh ground pepper, then a few spritz of spray butter. Overall a good meal and a filling one!
