I didn`t know what I wanted for dinner tonight, and was looking through my fridge and freezer, when I realized that I had a frozen turkey breast that hadn`t been used yet. So, I just popped it in the oven. It was pre-seasoned so I didn`t have to trouble myself with seasoning or marinating it.
For sides, I had some mashed cauliflower and salad greens. I had heard about mashed cauliflower through cooking blogs and websites - apparently, it tastes almost exactly like mashed potatoes. The benefits of cauliflower over potatoes is that it`s less starchy, and has more fibre and vitamins. I needed to use up half a head of cauliflower, so I made some. I just boiled some chopped-up cauliflower in salted water until it was soft. I then drained it, and used an immersion blender (aka a "stick" blender) to mash it. I added a bit of butter to it, as well.
Finally, I just added some salad greens on the side! I don`t usually add dressing to salad if I`m eating it as a side. I just eat it along with whatever`s on my plate. ^^
Well, I`m glad I figured out what to have for dinner, and that I was able to make something that tasted pretty good. I feel like such an adult now, lol. XD
