DOTD: Roast Pork wAsparagus amp Parsley Potatoes

This is what I had for dinner today. We made roast pork and it took like forever to finish! I was so hungry but it had to finish in the oven for like 90 minutes. Once it was done I quickly piled two slices on my plate! The pork was really nicely seasoned and remained juicy. It had minced meat and chanterelle stuffing. On the side we had asparagus since it is the season right now. Where I live we would have asparagus as many times as possible during may/june. We bought this from a local farmer and it was super soft! Of course we had hollandaise sauce with it. We also had some parsley potatoes on the side. Really delicious and filling dinner.
