Since my mom is really busy this week, my dad and I are pitching in to cook dinner! Tonight was my night. We bought a ton of mushrooms and tomatoes since they were on sale (89 cents a pound, pretty good for tomatoes!) I butterflied the chicken. I seasoned the inside of the chicken with salt, pepper, fresh rosemary, and garlic powder. I then filled it with mushrooms and put it in a cooking dish. I filled the dish with the remaining mushrooms and chicken. Once everything was in the dish, I seasoned the chicken and veggies once again with salt, pepper, and rosemary. I baked it covered for 35 minutes at 350F. Mmm it was so easy! I also made some boxed mashed potatoes and blanched some veggies I found in the fridge. It was all so easy to make, healthy, AND delicious :)
