So my boyfriend made dinner again this past week because I suck at cooking, lol. It can be difficult to decide on something we will BOTH eat (I like to eat pretty healthy, he has not inclination for healthy eating whatsoever), but we both like this http://www.canadianliving.com/food/quick_and_easy/pork_and_sweet_potato_skillet.php from http://www.canadianliving.com, which we have used at least a couple of times couple of times before. To make sure I got some greens, I asked him to cook some asparagus, too, which is one of the ONLY vegetables that he will eat, lol. Honestly, I don`t know if we used sweet potatoes or yams for this recipe. I really cannot tell the difference! Either way, it was good. This is a really quick, easy one-pan recipe, and it`s pretty healthy if you serve it with some sort of vegetable side or dish. Then it`s a complete meal. There are a few secret ingredients in this recipe, including soy sauce and allspice. Overall, it`s a really flavourful dish despite how simple it is, thanks to the spices and seasonings (which are pantry staples that you are likely to have lying around, anyway). So, if you like pork and sweet potato (or yams!) then I would recommend this recipe, especially if you are pretty busy and don`t have much time to cook. Oh, and the asparagus was pretty good, too! =)
