I guess I`m on a bit of a pork chop kick, as this was the second day in a row that I had one for dinner! This time, I had a honey garlic marinated porkchop with some stir-fried veggies.
The pork chop was simply a frozen, pre-marinated chop. The veggies were a pre-cut assortment that I purchased from my local grocery store for $1.79. There were a lot of different veggies in there, and it`s a large serving of veggies for one person. There were carrots, zucchini, bell peppers (red, green, and yellow), mushrooms, broccoli, cauliflower, and red cabbage in this assortment. It is a great variety, and is definitely worth the price! I was lucky to even get a package today, as the grocery store usually sells out of them. I can see why - it makes eating an assortment of vegetables *so* easy!
But anyway - on to my actual meal! ^^ I stir fried my veggies with olive oil and soy sauce. I managed to cook them without burning them, yay (I am not the best home cook, lol)! The pork chop was less fortunate, however. The marinade burned in the pan...fortunately, I didn`t burn the pork chop itself, but I had a lot of scrubbing to do afterwards. :P
I really liked this meal and will certainly be doing more stir-fries in the future. The pork chop was lean, but juicy and the vegetaables were crunchy (but not too crunchy!) and flavourful. Hopefully, I`ll be able to get those pre-cut veggies more often! :)
