I`ve just been so busy with school lately that I haven`t been able do a lot of cooking from scratch like I usually do. Although I prefer to make my own sauces when I have the time, store-bought pasta and jarred sauces can be a lifesaver during these busy weeks. For dinner tonight I made potato gnocchi that my boyfriend bought at the grocery store. For those who don`t know, gnocchi is an Italian pasta made out of potato instead of wheat, usually with a cheese filling. It goes well with any kind of pasta sauce or pesto, but we had ours with a Classico brand vodka sauce, which is our favourite flavour of sauce from that brand.
I wanted to add a little bit more oomph to the dish, so I sliced up a couple of onions and cooked them in a bit of butter until they were nicely carmelized. I also sliced some fresh mushrooms and sauteed them with the onions. With the gnocchi, the key is to not overcook it. Throw them in a pot of salted boiling water for 2-3 minutes. The trick is to scoop them out with a slotted spoon as spoon as soon as they float to the top (when they float, that means they`re done). We then threw the gnocchi in with the sauce, the mixture of onions and mushrooms, made sure everything was heated through, and smothered the whole thing in finely grated mozarella cheese.
Overall it was a delicious dinner. It wasn`t the best gnocchi I`ve ever had, and the jarred sauce just doesn`t compare to homemade, but it was pretty damn good for a store-bought meal that cost us about 5$. It was actually very rich and creamy with the vodka sauce and all the cheese, so much so that I had a hard time finishing my portion and ended up with leftovers which, paired with a salad, will make a great lunch tomorrow.
