Only 3 ingredients and so easy to make!
I made this for the first time for part of my dinner last night and it looked and tasted pretty good. I only needed to simmer a small amount of shallots (you can also use onions) and some diced butternut squash in chicken broth, and put it in a blender to puree the ingredients. I garnished it with some cilantro just for presentation ;)
I know there are some variations in recipes but this is all you need and it tastes pretty decent. It might be kind of thick, and you can add more chicken broth to make it more "soupy" (might be less healthy), or use low sodium chicken broth. You can also season it with some garlic powder or pepper to add some flavor.
I LOVE simple healthy recipes that are easy to make, with minimal ingredients AND taste good.
