Tonight I wanted to try something a little different so I decided to create something around pork belly. I didn`t cook it the way some people usually do. I prepared it similar to the way you would a pork chop.
Mushrooms in a red wine jus
I started by seasoning the pork in lemon, salt, garlic and a little oregano. The baby carrots were cooked in butter with fresh garlic and fresh thyme. Cauliflower puree, which is a staple of mine, is really easy to make. You boil it for about 20 minutes or until tender. Drain and add to blender with salt, cream and half a clove of fresh garlic. And finally, the mushrooms were cooked in the red wine jus to lock in the flavor.
