DOTD - Oxtail, Beans, Rice amp Plantain

Dinner for tonight was a special treat because I don`t buy oxtail on the regular. It`s an expensive meat that for me is only enjoyed once in a while. If anyone is not familiar with it, it is a west indian dish that is so hearty and filling.

I started off by marinating the meat in soy sauce, garlic and a little salt. I put a pot on high heat with oil and then added the meat slowly adding water as well, enough to cover. The meat was cooked for about 4 hours. It has to be tender or it isn`t done.

I made the rice with some coconut oil and salt for flavor. And I boiled the plantain. You can also fry plantain but I`ve been liking the taste of it boiled lately. Hope you enjoyed...The photos do not do it justice.
