This is my super delicious and super simple dinner of the night! I wasnt sure what we were having for dinner today, I planned on figuring it out and time slipped away from me and before I knew it, I was scrambling. I grabbed some 93% lean ground beef out of the freezer and put it in some water to aid in the defrosting process. I then went online to try to figure out what I wanted to make since I didnt necessarily want a plain ole run of the mill hamburger. I ended up going on my new favorite website and going to the beef section and found a sloppy joe recipe. I asked my boyfriend if that sounded good to him, he agreed, so I went ahead and planned on making that. The only thing we needed was hamburger buns and tomato paste, so I made a quick trip to the market. While there, I also grabbed a bundle of fresh asparagus because it looked good and it made me want roasted asparagus. Hey, it works! I followed the http://www.skinnytaste.com/2010/10/skinny-sloppy-joes.html except I used a green pepper instead of red because thats what I had in my refrigerator. I also skipped out on the mushrooms. Otherwise, I followed the recipe to a T. I will say this is a DELICIOUS sloppy joe recipe! Ill admit, I enjoy Delmontes version of sloppy joe sauce in a can, but this blows that straight out of the water. I made a sandwich for my mother and gave it to her and she said it was awesome and shes a huge food critic when it comes to the healthier options I make because shes all about butter and Im about butter in MODERATION or swapping it out for something lower in calories. For my asparagus, I washed it, dried it and set it on a baking sheet (that I covered in foil for easy cleanup). I drizzled with 2 teaspoons of olive oil, sprinkled with minced garlic, fresh ground black pepper and sea salt. I then roasted them in a 400 degree oven for roughly 25 minutes, shaking the pan halfway through. They were great. I can see myself eating the rest tomorrow with some scrambled eggs.
