DOTD - Braised Ribs, Mashed Carrots amp Asparagus

Today I had a lot of time to spare so I decided to cook something that requires a long process. Ribs can be amazing when they are slow cooked in a sauce, which is exactly what I did.

The Meal:
Braised pork ribs
Mashed carrots

I started off with some tomato puree, water, onions, sugar, fresh cilantro, the zest and juice of two limes and hot sauce. I let that boil a little and then added the pork ribs. I cooked it for about four hours on medium high heat.

The carrots were boiled for about an hour and then mashed with salt, garlic, basil and a little cream.

The asparagus was pan fried in butter with garlic and a little sea salt. I didn`t cook them for long so that they kept their crunch.
