On Sunday I made a big pot of stir fried vegetables with chicken. It turned out really good and not only was it my dinner on Sunday, but it ended up being my lunch for a few days as well. I started off by putting some olive oil and sesame oil in a pan and putting in my cut chunks of chicken. I cooked it thru and then added in my vegetables -- peppers and onions and pea pods. I cooked thru, adding a little bit of soy sauce. As I cooked it, I began adding in my other vegetables -- blanched broccoli, canned cut baby corn, canned water chestnuts. For seasonings I used soy sauce, oyster sauce, teriyaki sauce and a little sesame ginger sauce. It turned out quite delicious. The vegetables were cooked to perfection. It wasn`t until I was done cooking that I realized I forgot to add carrots to the mix because I forgot the bag in the fridge and it wasn`t on the counter in a visible spot. I ended up serving this with some white basmati rice.
