Tonight my mom made soybean paste stew for dinner. She started off making the anchovy and kelp broth. Then in the pot she added mussel, octopus, mushrooms, and the broth to cook the ingredients. When those were almost cooked she added the zucchini, white onion, and cabbage and cooked for ten more minutes before she added the soybean paste and red pepper paste. After the pastes and powder, she let it cook for another ten minutes, tasted the stew for flavour, and lastly added chopped green onions, tofu, and red chili pepper flakes into the stew. She let it cook for five more minutes then divided it and served each with a bowl of rice. The stew was delicious and perfect for the cold night.
