I have wanted pulled pork for a while now, but instead of using pork this time around I wanted to experiment with chicken. I will say this, this was an absolutely delicious meal and SO easy! I made a double serving of this so it would go a little further, plus I knew giving my boyfriend one sandwich for dinner wasnt going to cut it, so I wanted to make sure this lasted more than one meal. I started off by taking out my handy dandy crock pot and mixing in the ingredients that make the sauce, combining and then added the chicken last:
- 2 cups tomato sauce
- 5 tablespoons cider vinegar
- 5 tablespoons unpacked light brown sugar (you can use dark brown, but I tend to always buy light)
- ½ cup ketchup
- 1 packet McCormicks Pulled Pork seasoning envelope
- ~tablespoon of minced garlic
- 2.5 - 3 pounds of raw cleaned chicken breast
After the chicken is added you have to coat it in the sauce, cover and cook on high for 4-5 hours. After its done uncover, shred the chicken using 2 forks and mix with the sauce thats in the crock pot. You can eat as it, on a hamburger bun, an onion roll, etc. even on top of salad. But I wanted to have a true pulled chicken sandwich, so I whipped up some cole slaw and let it marinate in the fridge for a few hours prior.
Cole Slaw is so simple to make. You really make it in batches as to how much you would like. Its equal parts vinegar and sugar mixed in with mayonnaise. I buy the shredded Dole cole slaw mix so I used the entire bag and I mixed it with 3 tablespoons sugar, 3 tablespoons vinegar and 1/2c light mayonnaise. The sugar ended up being a little too much so I added more vinegar to substitute the sweetness and it came out perfect. A little salt and black pepper and it was good as gold!
