Dinner of the Day: Lasagna amp Green Salad

For dinner today, I had half of a leftover lasagna that my boyfriend didn`t finish last night. It was from a local Greek/Italian restaurant that we like to order from. I just popped it in the oven to heat it up. :)

I decided to add some salad to the lasagna to make my meal more balanced. I usually have a container of mesclun greens in the fridge, so that I can add some to whatever I`m eating and get my vitamins! The ones here are from a brand called Organic Girl. I got them on sale for $4 from Wal-Mart, and the tub is huge! It was such a good deal. Now, I just need to make sure I eat them up before they start wilting, lol.

The lasagna itself was pretty good! I have had worse lasagnas, for sure. This one wasn`t fabulous, but it did hit the spot. It wasn`t an authentic Italian-style lasagna, which I far prefer to the standard noodles/beef/tomato/mozzarella type. I find it to be plain that way, but still yummy.

This was definitely a satisfying meal and I can see myself having leftover lasagna and salad greens again. :) My boyfriend really likes the lasagna that we get from our usual delivery place, but he never finishes a full one. And, he`s bad about eating up leftovers. So there will be more lasagna in my future, lol.
