This is another dinner I had put together which is similar to the dinner I had the week prior (which was homemade sauce, angel hair and turkey sausage).
I had about 1/3 of a box of Barilla angel hair and 1/3 of a box of Barilla elbows in the cabinet (since I generally cook serving sizes of pasta, particularly for myself). Instead of having 1 serving left in each box, I just threw them all in a pan of boiling water and let them cook up together. I planned on making a double batch of homemade sauce this night so I knew the 6 servings of pasta would balance out with the sauce so in turn it all worked out well.
I had some chicken meatballs from Whole Foods in the freezer that I took out to defrost. They had spinach, garlic and cheese in them. I tend to really like chicken meatballs because they are SO flavorful you dont even know they are chicken. I put them in a baking dish. My boyfriend wanted sausage so I took out a pack of Al Fresca garlic chicken sausage and put them in the same baking dish. Both items had been cooked previously by the manufacturers so they only needed to be heated up. If they were raw Id have cooked them differently. I let them bake up in a 350 degree oven, turning halfway through to brown them on both sides.
I then made my homemade sauce, using a big can of diced tomatoes, a big can of tomato sauce, fresh onions, fresh green peppers, olive oil, and a bunch of seasonings. It was delicious. I love chunky tomatoes in sauce, it really gives it a homey feel plus it makes the dish heartier because your meal isnt just swimming in liquidy sauce.
By the time all the food was done cooking I had enough Weight Watcher points to have a sausage and a serving of meatballs, so thats what I did. I put my pasta on my plate (which was nicely mixed of elbows and angel hair), layered the chicken sausage and meatballs on, and topped it all with a serving of sauce. It was soooooo good! My boyfriend tried a meatball and even though he isnt a terrible fan of cooked spinach and cheese, he thought they were very good. The cheese was more of a parmesan type so it wasnt like gooey pieces of cheese in it.
Overall, a great meal and Ill definitely be picking up those chicken meatballs from Whole Foods again. If you are interested in trying the meatballs yourself, they are in the chicken section of Whole Foods, but where they have the prepared section (off to the side of the raw).
