I decided to make honey, sweet-chili glazed salmon for dinner the night and added some veggies, baby potatoes and a side of spanish rice. For the salmon I seared it then topped it off with honey and sweet-chili sauce before putting it into the oven to finish cooking. I then boiled the potatoes and made the spanish rice. For the spanish rice, I cooked it with tomatoes and red beans and let it reduce. The veggies were from a frozen bag so I just steamed these in the same skillet that I seared the salmon to keep the flavour. Add a dash of salt and pepper on everything and you`re all set!
