On Saturday I made some homemade chili for dinner. With the weather getting colder I`d been wanting chili something fierce and decided it was finally time to make it. Give into the craving! I make my chili in a fashion that`s pretty healthy and it doesn`t involve a whole lot of ingredients, nor does it take a lot of time. I made a pretty big pot (roughly 8 servings or more).
Here`s what I used:
1 1/8 pound 93% lean ground hamburger
1 large onion, diced
1 1/4 large green peppers, chopped
1 can black beans (do not drain)
1 can red kidney beans (do not drain)
1 can tomato sauce
1 can fire roasted garlic diced tomatoes
1 can basil, garlic and oregano tomatoes
1 1/2 teaspoon cumin
2 tablespoon chili powder
Sprinkle sea salt
Sprinkle black pepper
Sprinkle garlic powder
1/3 cup water
Adjust seasons to taste
I started off by browning up my lean beef and cooked it up with my onions, garlic and peppers. When the onions and peppers were half-way cooked I added in my canned tomatoes, tomato sauce, cans of beans, water and all my seasonings. I mixed it all up, letting it simmer and once warmed I tasted the sauce and sprinkled in a little more cumin and chili powder. I then let it simmer for over an hour on the stove.
The chili was very good, but I will say it was AMAZING today. It got a whole lot thicker and the seasonings sort of "marinated". I`m looking forward to making some chili mac tomorrow for dinner!
