Dinner: Home-cooked Fettuccine w Peanut Sauce and Veggies

So today was another home cooked meal for dinner for me. I didn`t have much in the refrigerator so I had to just use what I did have. I had some already boiled fettucicine noodles leftover from spaghetti night I had, so I knew I wanted to make something involving that. I noticed that I had some peanut butter so I went online and googled "fettuccine and peanut butter" haha. It came up with this simple recipe that fortunately I had the majority of the ingredients. I although did not have any protein so this was a vegetarian dish (except for the broth used). All you need is:
1/2 cup fat-free, less-sodium chicken broth (I used beef broth)
1/4 cup chunky peanut butter
1/4 cup low-sodium soy sauce
3 tablespoons brown sugar
2 tablespoons rice vinegar
2 teaspoons grated peeled fresh ginger (i omitted this ingredient)
2 teaspoons chile paste with garlic (i substituted this with siracha)
4 garlic cloves, minced
8 ounces uncooked fettuccine
1 pound firm tofu, drained and cubed (i didn`t have this)
1 cup (2-inch) sliced green onions (i didn`t have this either)
1 cup shredded carrot (I used assorted frozen veggies instead)

"Combine first 8 ingredients in a small saucepan. Cook over medium heat 5 minutes or until smooth, stirring frequently. Remove from heat.
Cook pasta in boiling water 8 minutes, omitting salt and fat. Add tofu, onions, and carrot; drain. Place pasta mixture in a large bowl. Add peanut butter mixture; toss gently."

I included where I got the recipe in the source link below! Overall this came out really good. My roommate said this was one of her favorite dishes I`ve made so far. If I had bean sprouts, crushed peanuts, and crunchy carrots I would`ve added that to make it taste even better.
