This is what I`ve had for dinner two nights in a row (not tonight though the taco meat was finished up yesterday). It was SO delicious and quite healthy even though it looks like it`d be a waist buster. I had picked up some 93% lean ground turkey and my boyfriend cooked it up with some sauteed onion (no olive oil) and he seasoned it up with taco seasoning and some garlic powder. Super simple, but delicious. You really can`t tell it`s turkey because the seasoning takes over, but you can slightly tell in texture because it is slightly softer than what ground beef would become. Either way, I really like ground turkey in sauces or taco meat.
I layered on some bag salad since I had some in the fridge, topped it with diced tomato and white onion. I took a single yellow corn taco shell and broke it up into pieces and scattered the pieces all around the plate. I sprinkled on my measured serving of taco meat, then took 2 tablespoons of Walmart brand queso and heated it in the microwave. When warmed I drizzled it over the salad and lastly put a generous helping of medium Chi-Chi`s salsa in the center of the plate since I was not using salad dressing I needed something to help coat the bed of lettuce when eating. This was undoubtedly delicious and something I quite enjoyed. I told my boyfriend I could eat that one meal every day and not get sick of it, hah.
