Our homemade dish for tonight was another recipe that I had in my recipe archives for a while that I wanted to test out, Peking Pork. It`s one of my favorite dishes to have in restaurants, so I thought why not try it at home.
Take 1lb of pork tenderloin and cut into 1/2 inch thick slices. Then, Pound the pork with a mallet until tender.
Marinate: Combine the following ingredients in a large mixing bowl and marinate the pork pieces in the marinate for at least 30 minutes.
1 tablespoon cornstarch
1/2 teaspoon Shaoxing wine
1/2 teaspoon salt
Heat up a frying pan with oil and fry up the pork pieces until a golden brown color is reached and they are slightly crispy. Drain the pork with paper towels and set aside.
Sauce: Combine the following ingredients in a large bowl:
1 1/2 tablespoons tomato ketchup
1/2 tablespoon plum sauce
1/2 tablespoon chili sauce
1/4 teaspoon sweet bean sauce, or Hoisin sauce
1 tablespoon Worcestershire sauce
1 1/2 tablespoons black vinegar
1 1/2 tablespoons sugar
small pinch of Chinese Five Spice powder, optional
2 tablespoons water
Once all of the sauce ingredients are mixed well bring the sauce to a quick boil, add the deep fried pork, and stir until all of the meat is well coated in the sauce and the sauce has reduced to a thicker texture.
Dish up and serve with a side of warm white rice.
