Dinner: Eggplant (Veggie) Meatballs amp Pasta

While browsing the grocery store a few weeks ago and trying to find quick and simple meals to make during the week afte r a long day at work I spotted these veggie meatballs near the breaded and frozen eggplant slices. I knew this was going to end up solely being a meal for myself on a "fend for yourself" type of night because my boyfriend is rather anti-vegetarian meals. Since we had pasta in the fridge from the night before, I incorporated these into some left over whole grain linguini (my boyfriend has pasta with some leftover regular meatballs). I cooked these in the convection oven as described on the box and threw them on top of my heated pasta with homemade sauce. The fabulous thing about these is these meatballs are made out of EGGPLANT! They don`t taste anything like eggplant (then again eggplant is a veggie that will take on the flavor of whatever you put in it). They are quite filling, which was surprising because they really sit in your belly. I couldn`t finish my plate of food and ended up feeding the remainder to my dogs because since I could Weight Watchers points it just wasn`t worth it to figure out how many points the small amount I had remaining was to ea the next day. I really enjoyed these and will undoubtedly try more of what this brand has to offer. I know they offer "parm bites" which is like an inside out eggplant parm but they are ridiculously hard to find around me. Anyway! I`m getting off track -- this was my dinner and it was delish.
