Dinner was absolutely amazing again tonight. I decided to make this delicious eggplant parmesan recipe I found online a while ago. I picked up a fresh eggplant from my local ShopRite and had some lean ground turkey and some turkey sausage so I decided to make the eggplant parmesan. I used a few other ingredients too which were pasta sauce, Romano cheese, grated Parmesan cheese, and shredded mozzarella cheese. I also used some fresh garlic (about 3 cloves chopped), some seal salt and pepper to season it.
After slicing, coating, breading and frying the eggplant in olive oil, I then began layering the eggplant, meat sauce then cheese. I did 3 layers, and baked it for about 25 minutes.
I baked some crescent rolls on the side. I was absolutely stuffed and my family enjoyed it as well!
