This is what I had a couple nights ago for dinner. I`ve just started eating eggplant and now I just can`t get enough of it. I made eggplant parmesan the easy way this night. I sliced the eggplant and dredged it in some flour then dipped it in an egg wash and then coated them with Italian style breadcrumbs. I quickly fried them and that was it! I made spaghetti sauce and used the only pasta I had in my pantry and served it up. This dinner was super simple. I usually make eggplant the more traditional way where you layer the fried eggplant slices with tomato sauce and lots of cheese and then bake it. I didn`t have too much time to feed my hungry mom and sister so I did it this way. It was all soooo good!
