This was my dinner from this past weekend. I wanted to throw something together in the crock pot so my boyfriend and I would have dinner without even having to think about it. While picking up some essentials for the house at the market, I picked up some boneless center cut pork chops and a packet of Crock Pot Barbecue. This was such a simple meal to throw together and was done 8 hours later (I cooked on low for 5 hours and put it on high for the remainder). It would have been done sooner, but with pork I wanted to ensure it was cooked all the way through.
I emptied the package of barbecue seasoning into the bottom of my crock pot, put in the designated water and a can of tomato paste and stirred until blended. I then added in my washed and trimmed (of visible fat) pork chops into the bottom of the pot. I then added sliced onion, potatoes and a bag of baby carrots. I added in some minced garlic and a small green pepper. Then it was time to "set it and forget it".
I stirred it once while it was cooking and 30 minutes before it was done I added in a bag of frozen mixed vegetables (green beans, yellow wax beans and carrots) - stirred it in and when they were no longer frozen I shut the crock pot off and let it cool for a little bit since it was scalding hot.
For a side I made brown rice -- which I cooked in my microwave since I didn`t want to wait an hour+ in the rice cooker. 17 minutes later rice was done and dinner was served!.
This was a really great meal and the leftovers (after eating for lunch a couple days) were frozen for a quick meal in the near future.
