This is what I ended up making for dinner yesterday in the crock pot but did not end up eating until today. Chicken chili is a great alternative to the typical beef based chili. There are two different varieties of chicken chili as well -- the regular red sauce based version and a white chicken chili (which I can say I have never tried). Since this is made in the crock pot it`s such a simple thing to do. It really only consists of opening cans, a packet, chopping up some veggies, cleaning some chicken and having patience. I make my chicken chili the following way:
1 ½ green peppers, diced
1 large (or 2 medium) onions, diced
2 cans diced tomatoes (1 w/ green chiles)
1 large can of tomato sauce
1 can black beans (w/ brine)
1 can kidney beans (w/ brine)
1/2 bag frozen corn
1 packet chili seasoning
1 tablespoon of minced garlic
2 pounds raw chicken
You basically put all ingredients into the crock pot -- the raw chicken on top of it all when combined, cover it and cook on low for 8-10 hours, or 6-7 hours on high. Then serve!
