Dinner: Chicken, Sausage, Spinach and Cheese Cannelloni

Today my fiance came home from work with a taste for something italian, so I decided to make some cannelloni for dinner. Now while, this may not be the traditional way of making them, this is how we love them.

I made them with a side of roasted asparagus and some homemade garlic bread. The bread was some delicious artisan bread.

To make the cannellonies, I first make some crepes. I really like making crepes but I must warn you, if you want to make them then you must use a good nonstick pan in order for them to come out well. There are many recipes for them online.

While my crepe batter was in the frigde, I seared 3 chicken breasts seasoned with salt and pepper. I then make 3 turkey italian sausages and I ground them along with the chicken breasts.

After I make the crepes and the chicken I get a large bowl and begin to mix the filling of the crepes to make the cannellonies. I use 4 oz of fresh mozzarella cheese, 4.5 oz of Ricotta cheese, 1/2 cup of grated parmesan cheese, 1/2 cup of goat cheese and about 1 cup of freshly shredded English white cheddar. I season it with salt, pepper, oregano and parsley.

I then wilt down some fresh spinach (almost the full bag) and mix it with the cheeses as well as the shredded chicken and sausage. Once I mix all the ingredients very well together, I then begin to stuff anf roll the crepes into cannellonies.

In the baking pan, I cover the bottom with pasta sauce and add each one in. I then cover the top with pasta sauce and then shred some more of the cheddar on top. I bake them in the over at 350 degrees F for 25 mins.

Then came out delicious. This is not the first time I made them and it definitely wont be the last. My fiance and son love them too!
