this was my yummy dinner last night. we got some baked chicken quarters from the grocery store and i made fresh mashed potatoes at home. we had a jar of gravy left over from the holidays so i just heated that up and topped the mashed potatoes with the gravy.
the chicken was really juicy and flavorful. we used to get fried chicken for a quick dinner like this but baked/grilled is so much healthier! i didn`t eat the skin either so that`s gotta cut off the calorie count by even more :)
overall, it was a really great imitation home cooked meal without all the fuss and all the actual cooking ;)
