I wanted to share with you all the dinner I made for myself last night.
I was at home, and my mom had just gone grocery shopping that morning so I decided to make myself some dinner.
I wanted to make some chicken breast, but unfortunately it was frozen solid, so instead I opted for some chicken nuggets.
As a side, I made some roasted potatoes. This is one of my favourite things to make, since it`s so simple and easy but it tastes amazing. Just just cube some potatoes, toss them with some olive or vegetable oil and your choice of herbs and spices, and cook in the oven at high heat until they are tender.
Next, I decided to make myself a warm kale salad. I know a lot of people don`t like kale (my parents don`t like it) but my sister and I love it.
For this, I just sautéed some garlic, red onion and mini bell peppers with some olive oil.
Once they were cooked, I just added the kale, covered the pan and let it wilt down a bit to soften the texture. Then I take the pan off the heat, add just a little bit of balsamic vinegar and toss before adding to my plate. Kale can be a little bitter, so I think the balsamic is the perfect counter balance.
Carmelizing the onions and garlic also offers a bit of savoury/sweet as well.
I love the combination :)
