This was my dinner from last week. I had gotten out of work early because I had a dentist appointment and since I have a led foot I was able to get to my appointment with 15 minutes to spare. I knew I needed some more pita bread because we had a few meals which involved pita and I have a pita addiction and knew the 2 pieces left would not last me thru Friday. So I popped on into the Lebanese bakery and picked up a pack of fresh pita bread. Then while there I got the ingenious idea of having Lebanese food. Last week was my big "quick and easy" dinner week where I really didn`t cook-cook anything. A lot of the foods I made/we ate were quick and simple, precooked, bought out, or reinvented into some sort of meal that I did on a whim. I bought a piece of baked kibbee, a container of rice pilaf and a small scoop of feta salad (I wasn`t truly impressed with the feta salad -- I`d rather my feta plain, on salad, not mixed with Lebanese dressing and veggies). I threw this together, heating it up in the microwave and cut up a quick salad to have along side the food. I had some pita bread (on the side, not pictured). The rice pilaf and the kibbee were fabulous - they usually are. I love Lebanese food, so my tummy was a happy camper!
