This is a rather new dumpling as I`ve only seen it at a Fusion Dim Sum Restaurant.
It`s a variation of the har gow, which I had introduced earlier this week.
This dumpling is actually double the size of a regular har gow, or shrimp dumpling, though made of the same rice paper wrapping and glazed shrimp inside. Rather than having the entire wrap close on the shrimp, the top is left open where a steamed scallop is placed on top with a serving of XO sauce.
XO sauce is a Cantonese style sauce that`s exceptionally extravagant depending on the ingredients. For the most part, it is made with dehydrated seafood, such as scallops, abalone and sometimes even Shark Fin. Depending on the ratio of the dehydrated seafood, the price can be anywhere from $6.99 a 50 mL bottle to $50 for a mL bottle.
It`s extremely rich and savory in flavor and its not used for most dishes.
