This is my dinner of the night from last week, actually. Ive been meaning to post this, but hadnt gotten around to it. I will say, this was a really delicious meal and something I will be making again and soon at that. I felt as though this was restaurant quality! I had wanted roasted green beans, but when at the market I also saw fresh brussel sprouts so I grabbed a pack of those as well. I rinsed both the green beans and the brussel sprouts and dried them on a napkin. I took two separate pans and layered with foil for easy clean up. I cut my brussel sprouts in half length wise, put the sprouts on a pan and drizzled with 2 teaspoons of olive oil then seasoned with fresh cracked black pepper and sea salt. I tossed it together and put them into a 425 degree oven for 20 minutes. I shook the pan halfway through and tested the doneness of the sprouts, I put them back in for another 5 minutes and they were perfect. If your sprouts are larger, you may have to cook for 40 minutes. For my green beans, I layered them onto a pan, sprinkled with 2 teaspoons of olive oil, fresh cracked black pepper and sea salt, a little bit of garlic powder and 1 ½ tablespoons minced garlic. I tossed it together and put it into the oven for 20 minutes, shaking the pan halfway through. For my pork, I simply followed a recipe I had found online. It sounded really good, so I wanted to give it a shot. The only thing I altered was after I took my pork out of the pan, I set it aside and cooked my sauce, then added the pork and pork juice (some of the juice came out from me stabbing it with a fork to take them out of the pan) back into the pan and sautéed while basting with the sauce for a few more minutes. When serving, I drizzled sauce and onions on top of each serving.
If you want the recipe I used, heres the link for it: http://www.skinnytaste.com/2008/06/pork-chops-with-dijon-herb-sauce-525-ww.html My mashed potatoes were simple, peeled, diced and boiled. When done, I drained the water, added in some milk, some butter, some pepper and salt and mashed away until nice and smooth. This was such a great meal and I enjoyed it thoroughly. Just typing about it my mouth is watering and I want to make this for dinner tomorrow
