Dessert: Pumpkin Cupcakes with Cream Cheese Frosting

I made these a while ago but am now putting up this post~ A while ago, Emilynoel83 from Youtube talked about these Pumpkin cupcakes/muffins you can make with only a box cake mix and a can of pumpkin puree. I thought it sounded pretty amazing since the recipe only calls for 2 ingredients. Emily said that she likes using a spice cake mix so I bought that kind instead of a white or yellow cake mix.

All you do is mix both ingredients together. I should have used an electric mixer but I was a little lazy and didn`t want to take out mine. You can still see some flour clumps, but it didn`t effect the taste at all. I baked mine for about 20-24 minutes and then let it cool down before piping the icing. I made a simple cream cheese icing for these.

They were incredibly moist and soft. My sister complained that these were too soft. How is that a complaint? lol I think next time I`m just going to use a yellow cake mix and add my own spices. I think the spice cake mix added a little too much spice flavor. The Trader Joe`s brand of pumpkin puree also tasted a lot like squash instead of pumpkin so I`m going to use a different brand of pumpkin puree. Overall, you can definitely taste the pumpkin and these were really good. It`s a inexpensive way to impress your friends and family!
