Hello Luuuxers!:) Sorry for the long hiatus, don`t worry I am still alive, definitely cooking and still eating up a storm! I hope that everyone had a great weekend! We had a gathering last Saturday and here`s my contribution to the potluck party, stuffed tofu :D It is a super delicious and not to mention healthy too and it is perfect for any occasion! All I did was fry up some tofu and stuffed them with vegetables. To do this, you want to first cut the tofu in fours, pat them dry, sprinkle some salt on the surface and coat them with a little corn starch before deep frying them. While the tofu is frying, you can julienne some carrots and cucumbers and chop up some cilantro. I know a lot of people don`t like bean sprouts so you have the option of leaving that out, I personally love the crunch it gives so I stuffed my tofu with as many bean sprouts as I could :P When the tofu cubes are done, let them cool a little before slicing them in halves and then you could stuff the vegetables as much as you want! I love eating this with a side of chilli sauce+lime but you could eat it with hoisin sauce or any sauce according to your liking!:) It`s really easy to make and guaranteed to be a crowd pleaser!
