If you know me... you know that Italian food or similar is my weakness. One of my favorite dishes is my Shrimp Scampi with White Wine and butter sauce. It is not only delicious, tastes naughty and is... did I say Delicious - it can be made in under 30 minutes which is perfect for a Mother who is trying to cook a hearty meal in a short amount of time. I had all of the ingredients I needed either in my freezer, fridge or pantry. Since I had to defrost the shrimp and lobster as well as clean each - it did take longer than 30 minutes for me. But, if you go to your local grocery and get them all cleaned and fresh - you`ll have a 30 minute meal on the table and ready to eat quickly. My children love pasta - it`s fun to eat and let me tell you, this particular one smells divine. This is an all time fav in our house and while it may have some naughty ingredients, it is really not as bad as you think. Ingredients & video tutorial below.
If you are unable to eat seafood or want to substitute them out - you can add chicken breasts for a healthier version. When cooking up the chicken breast, cook them up with some EVOO (extra virgin olive oil) first. Do not initially cook in butter like I did with the seafood. This way - it will not be so heavy. If you want to use butter to cook the chicken, that would be great too. You can also substitute with Mahi Mahi (fish) or other white fish.
Ingredients / Supplies needed:
1 Box Linguini Noodles
25 - 30 Peeled and De-vained White shrimp
1 Lobster Tail (remove the meat from the tail)
1 -2 Tablespoons Capers
5-6 Sundried tomatoes
Garlic Salt, Pepper, Onion Powder and Italian Seasoning - all to taste
1 - 1.5 blocks of butter
1-2 cups of your favorite white wine, I used Chardonnay
1 whole lemon or you can substitute for lemon concentrate - you will use approximately 1/4 of a cup (or to taste)
1 Sauteed Pan to sauteed your main ingredients
1 pot to boil your pasta
