Kale is all then craze these days. They`re packed with vitamins and other good stuff. Sure we can turn them into kale chips, but we`re just tricking ourselves. If you`ve ever had kale by itself, you`ll know that its tough and bitter. But, prepared correctly, its delicious and really healthy. I got this recipe from copying the kale salad from Wholefoods. So that means, if you`re lazy, just stop by Whole foods and pick up their raw kale salad.
For this salad, you will need one to two stalks of kale, tomatoes, carrots, feta cheese, lemon, salt, pepper and avocados if you have any. I didn`t have any avocado so I didn`t use it, but it`s delicious with or without it.
Cut your tomatoes into bite size pieces, cut the carrots into strips, and pull the leaf part of the stem of the kale and cut or rip the leaves into strips. With your kale in a bowl, squeeze lemon juice into the kale and massage the lake. Yes, your eyes do not deceive you, massage the kale. cube and massage in avocado if you have some. Then add some salt and pepper and the rest of the ingredients on top and let it sit in the fridge for at least 15 minutes,30 minutes to an hour is better but, 15 minutes is okay too. Finally, toss and enjoy.
You can really add anything to the salad, but this is just a nice and simple way of enjoying the veggies without drowning it in dressing. It`s also a much healthier way to enjoy the veggies.
